Life continues to be busy but the sun is shining – yeah! – we’re enjoying a real Indian summer this year, which is rather nice. We feel like we start each post talking about the weather and how busy family life is, so let’s get straight into this week’s recipe!
We keep telling each other we’ll post some quick one dish dinners, but get sidetracked by sweet slices and chocolate! And to be honest it doesn’t take much sweetness to distract us. Surely there’s nothing wrong with eggs on toast and chocolate fudge cake for dinner?
We believe this recipe is the perfect marriage of flavours – chocolate and peanut butter together in a bar form with guest appearances from icing sugar, butter and wine biscuits (graham crackers or similar). Peanut butter and chocolate has long been a popular American combination, but is newer to this side of the world, so if you haven’t tried it yet, this recipe is a good way to start. This is a really simple no bake slice, that’s great for summer when you don’t want to heat things up even more by turning on the oven! It works well in lunchboxes or for afternoon snacks. This slice is best kept in the fridge and freezes really well. Beware though – if you’re not a peanut butter fan, you might want to skip this one!
Chocolate Peanut Butter Bars
200 grams butter, melted
1 packet Superwine biscuits, crushed in a food processor
2 cups icing sugar
3/4 cup peanut butter
200 grams chocolate (dark works is best, but milk chocolate also works)
2 tablespoons peanut butter
Lightly spray a 20 x 30 cms (approximately) dish.
Place the melted butter, crushed biscuits, icing sugar and 3/4 cup peanut butter in a medium bowl and stir until all ingredients are thoroughly mixed together. Press firmly into the prepared pan.
In a microwave safe bowl on medium heat, melt the chocolate with the two tablespoons of peanut butter, stirring after each minute. Spread over the prepared base. Refrigerate for at least one hour before cutting into squares. Best stored in the fridge.
