Lemon and Passionfruit Slice

We had a lovely break with our families during January – although it’s supposed to be summer here it really hasn’t been that warm yet! We hope you have also managed to spend time with the precious people in your life.

We might not have blogged since Christmas, however we’ve spent a lot of time talking about, thinking of and eating food! As a result we have lots of wonderful recipes to share this year, so watch this space!

For us in New Zealand it’s time for the kids to head back to school and parents to breath a sigh of relief.  As much as we love our little treasures and enjoy the relaxed summer days, there’s something equally as liberating and satisfying about sending the kids back to school and getting into the routine of the school year – it’s all about life balance!

One downside is getting out the school lunchboxes and trying to remember what to put in them! There’s the usual requests for pre-packaged chips and “Tiny Teddies”, the moaning about healthy sandwiches and the obligatory piece of fruit that never gets eaten and goes back and forward to school for weeks before it has to be thrown away as it’s so bruised its inedible (not that our kids don’t eat fruit – it’s that it seems to be too labour intensive to eat during lunch break and they’d rather play!).

We thought that the first recipe post for this year should be a tasty robust slice that is great for the lunchbox and enjoying with a cup of tea in your nice quiet child free house!  This Lemon and Passionfruit Slice is easy to make and keeps well in a tin, fridge or the freezer.

Lemon and Passionfruit Slice

There are two steps to the recipe, base and topping.  They are both simple and quick. The base is melt and mix and the topping is mix only, so very low stress.  Probably the hardest thing in this recipe is getting the passionfruit pulp.  If you don’t have a vine handy in the back garden or passionfruit are out of season, you can buy passionfruit pulp in either the dessert topping aisle of the supermarket (next to the chocolate sauce!) or in the section that has the powdered milk and yogurt mix.

Lemon and Passionfruit Slice

Ingredients

Base

2 cups self raising flour

2 cups desiccated coconut

1 cup caster sugar

250 grams butter, melted

Topping

395g tin condensed milk

1/2 cup lemon juice

1/4 cup passionfruit pulp

Preheat your oven to 180 degrees. Lightly grease or line your dish (30cm x 20cm).

Mix self raising flour, coconut and caster sugar in a bowl.  Make a well in the middle and pour in the melted butter.  Mix together and press mix firmly into the slice pan.  Bake for 10 min.  Meanwhile stir together the condensed milk, lemon juice and passionfruit pulp.  pour over the hot base and return to the oven for another 10 min.  Cool, or preferably chill overnight before cutting.

Done!
